Lamb BLT

It’s always nice to find a slab of lamb bacon stashed in the freezer, because when you come across some great tomatoes and italian bread, you’re one step away from a terrific  sandwich. I didn’t go the full purist route here this time; didn’t make my own mayo or bread (gasp!), and it’s not even lettuce (I grabbed a handful of leaves of young swiss chard from the garden). A sprinkling of smoked kosher salt on the tomatoes, and a drizzle of smoked maple syrup on the bacon and chard made for an awesome end-of-summer sandwich.
